We’ve been seeing it, and have heard people talking about it, since shortly after we moved to Mexico. This Noche Buena beer is only available seasonally, typically from October to December. It is a Bock beer, which makes it darker and nuttier than other typical Mexican beers. We tried it – and we liked it! Read more history about it here.

Lately, the city water that fills our cistern comes on about once every 23 days. We can typically make our 5000-litre cistern last us for up to 18 days. After that, we need to order a water truck.

After completing 4 years of Temporary Resident status we are able to apply for Permanent Resident status. With help from Josie at Mexico Paperworks (she is our facilitator of all things to do with Mexico government), Lorne got his Permanent Resident card! Shari will be eligible for hers in February.

We saw it online, so we had to try it… Lay down some lettuce, add mayo, turkey, and bacon, then roll it up in parchment. Cut it in half, then peel the parchment and eat. Yum!

We’ve been seeing this recipe for a blended-cottage-cheese flatbread, and have heard of people using it to make Lasagna. Of course we had to try it! It did not disappoint. 😀

It’s the time of year where we start keeping track of major storms, so we can be fully prepared if anything heads our way. This was the first time we have ever seen four (!) named storms all happening at the same time… Carlotta, Daniel, Emilia, and Fabio.

Final stop on our Taco Tour is La Taquiza. It’s more flashy, colourful, and noisy than the other places on our tour. And a much larger menu selection. Definitely caters to the cruise-ship tourists looking for a big eating experience.

Time for another propane refill. Propane fuels our stove, oven, barbecue, hot water heater, clothes dryer, and backup generator. A fill will typically last about 6 weeks before we’re due for another. Unless there’s a power outage – in which case the generator will consume about 5% of the tank every 4 hours.

Who knew there was another way to make fried eggs? These are cream‑fried eggs. Start with a cold pan and cover the bottom with a layer of heavy cream. Season the cream (garlic salt + pepper). Add eggs. Turn on the heat! When the butter has separated from the cream and the eggs are almost done, remove from heat and cover until yolks are done to your liking.

Our old Mini-Split AC was no longer cooling our bedroom effectively, so we had to replace it. We bought a new unit (see Feb 23 Snippet below). The installation was too big of a project to take on ourselves, so we hired professionals! It was a two and a half day process.

Tajin is a dry chili tangy spice blend which is very popular in Mexico sprinkled on fresh fruits and applied to the glass rim of fancy cocktails. It definitely goes well with mango. This is the first time I’ve seen it in ice cream! (Although it is mango ice cream, so I guess that’s okay)

People ask us about the temperature here in January. In the late wee hours overnight it goes down to about 15°C / 59°F. At 9:30 in the morning, in the home office, it was about 22°C / 72°F. By lunchtime our patio got up to 37°C / 99°F.
